Less than an hour from London, we escaped to Surrey for an immersive day of seasonally inspired wild fire cooking nestled beneath trees and surrounded by bluebells. After foraging for a few ingredients and a restorative brew and sweet treat, we learned how to transform a tiny spark into flame. 

With our open flames cracking away, our day of fire fuelled cooking started with a hearty brunch of meatball polpette panuzzo followed by a medley of delicious Italian inspired dishes with a wild twist, including: 

  • Chargrilled asparagus with whipped ricotta, warm N’Duja and wild garlic seed caper dressing 
  • Fresh nettle pici pasta with wild greens, chilli and pangrattato 
  • Venison Saltimbocca 
  • Elderflower pannacotta with fire roasted rhubarb

Our day slowed down and wrapped up with the most amazing homemade rhubarb marshmallows, which we toasted over the dying embers of our fires. We left full and happy as we wandered back through the woodland glen back and along country roads back to the train station.
